well it's been awhile since my last post.. This post is in memory of dear late husband who passed away earlier this year.................syd & I started this blog site as a result of our succesful restaurant and bakeries where "Jenny's Desginer Muffins" evolved into a muffin cult! I can only recommend that you try one of my delicous scratch muffins and see for yourself. I welcome any questions and feedback.

I know I talk alot about my muffins and as Anne in seattle wrote "she has an addiction to them", I too feel the same way!

Today I wanted to talk about "Stjerneskud" from my Vikings cookbook. This is truly a delicous dish and will knock your family and friends out with the presentation and most importantly, the taste. Let me know how you go with one.

Muffin Bake off

Thanks Elaine from the UK, who wrote me to let me know she and and a few friends recently held a muffin bake off at her home.....the good news is, her muffins (and you know where she got the recipes)were voted the best, being lower in fat with great taste!!

I want to take this opportunity before the crazy rush begins, to remind you all who have been writing to me with feedback and questions, that these cookbooks make lovely gifts and don't forget that muffins make a lovely festive plate....you can dress them up in coloured patty pans, make them mini, or regular size and best of all, they are a better for your body muffin.......don't forget they freeze well too.

TO EDITH from Washington State, thank you for the note on the "early days" when there was only 2 or 3 different flavours, but you've forgotten that in those days it was for home use and your grandma as mine did, was making then for we kids when we came over and you couldn't buy a muffin in a shop for "love nor money".

Today, of course you have so much to compete with and variety has certainly become the "buy" word. We, in our wholesale bakery, ended up supplying the grandma's with a variety of product and the kidlets thought it was grandma's home made muffin anyway!

Muffins Muffins Muffins and more Muffins

Hi muffinettes

A question has come up, not often, but it's out there, whether one could make a muffin "cake" by making the mix and filling a cake pan, the same as you would do a muffin tin. The only thing I can suggest, is to ad additional filling, ie: dates walnuts, sultanas or choc pieces, perhaps 5% to get a consistent "cake" mix.

Well, I caught my husband of 16 years, cheating in a cafe, in the older part of town, you might ask what was I doing there?! In any event I was there and I caught him with the most beautful, stylish, sumptuous muffin! made with white chocolate and raspberry pieces. His eyes were teary and I had to make my presence known twice before I received any attention. Let me know if you've had similar problems and whether his simple explanation that "he was testing out the market for me" is acceptable.

Thank you for the emails I have received over the past few months. Some of the questions have been repetative and I have neglected to answer.....sorry, been busy baking muffins and other goodies for parties and functions! The most common question has been, do these muffins freeze well? The answer is yes they do!

it's been freezing cold this winter for Adelaide, South Australia & muffins have been the order of the day! Well it has been a year since I released my blog site with Cinnamon Jenny's Muffins & The Vikings Guide to Scandinavian cooking and it's been GREAT! What a year. With this cookbook it always helps if the creator, at some time in his or her life, had been a Viking, but it is not necessarily critical! There is no doubt in my mind, you will find that the preparation of these dishes, is as much a delight, as the partaking.

Hi….how did you like the muffins? What?.....you haven’t gotten the book yet?

From initial comments, it seems the Tira- Misu muffin has the most interest to date, although, the nutritional chart, which is provided for each muffin, isn’t exactly for the dieters, at 10.15 grams of fat per 100grams.

For all you serious dieters, like my husband, the Old Fashioned Crunch…the muffin……not my husband……is the one for you at 5.4 grams of fat per 100grams, but always delicious……. never the less.

Keep those comments coming to me and watch for our new cookbooks in August or early September. For those of you who have questions about any of my recipes, please feel free to ask me and I will try to answer them on the blog site.

The muffin business for me, was not only a great commercial success - and it was a success - but it gave me a lot of satisfaction, to watch the morning tea tastes of Adelaidean business people and shoppers alike, change from a finger bun (yeast bun), to a delicious, healthy, wholesome muffin as an accompaniment to a great cup of coffee. So now I am sharing my secrets with the world.
