A question has come up, not often, but it's out there, whether one could make a muffin "cake" by making the mix and filling a cake pan, the same as you would do a muffin tin. The only thing I can suggest, is to ad additional filling, ie: dates walnuts, sultanas or choc pieces, perhaps 5% to get a consistent "cake" mix.

Well, I caught my husband of 16 years, cheating in a cafe, in the older part of town, you might ask what was I doing there?! In any event I was there and I caught him with the most beautful, stylish, sumptuous muffin! made with white chocolate and raspberry pieces. His eyes were teary and I had to make my presence known twice before I received any attention. Let me know if you've had similar problems and whether his simple explanation that "he was testing out the market for me" is acceptable.

Thank you for the emails I have received over the past few months. Some of the questions have been repetative and I have neglected to answer.....sorry, been busy baking muffins and other goodies for parties and functions! The most common question has been, do these muffins freeze well? The answer is yes they do!
